Applesauce Almond Bread

Tastes better a day or two after it is made; lovely as toast or as an afternoon tea cake.

Yield

Makes 1 loaf.

Ingredients

2 cups sifted flour
3/4 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup coarsely chopped blanched almonds
1 egg
1 cup applesauce
2 tablespoons melted shortening

Instructions

Preheat oven to 350 degrees. Grease a 9×5-inch loaf pan. Sift together dry ingredients. Add almonds. Beat egg and add applesauce and melted shortening. Mix in dry ingredients and stir until just blended. Do not overmix. Pour into greased pan and bake 1 hour.
