Apple Rice Breakfast Pudding

Yield

Serves 4

Ingredients

1 cup cooked rice
1 cup dark brown sugar
3 tablespoons margarine
1 cup unsweetened applesauce
1/3 cup water
1 teaspoon vanilla extract
1-1/4 tablespoons flour
light cream

Instructions

Preheat oven to 375 degrees F. Combine all the ingredients except the cream. Pour into a shallow pan and bake 20 to 30 minutes. Serve warm with the cream.

  1. I made this recipe and only added 1 beaten egg to the mixture and used unsalted butteri nstead of margarine I also put half a teaspoon of lemon juice in. This is a wonderful breakfast pudding as well as a quick and easy dessert. It’s great with lite Cool Whip or even a vanilla yogurt on the side. The best baking time on this here in Texas is about 45 minutes to an hour. It gives it a nice carmelized crust around the edges.
