Yield

1 ten-inch deep-dish quiche

Ingredients

1 10-inch deep-dish pastry crust
3 small potatoes, cooked and mashed
1/4 cup cubed ham (1/4-inch cubes)
2 cups grated cheese
5 eggs
1 cup milk

Instructions

Preheat oven to 325 degrees.
Place pastry crust in 10-inch pie pan, crimp the edges, and prick the bottom in several places. Bake crust for 15 minutes, then remove from oven. Increase oven temperature to 375 degrees. Layer mashed potatoes, cubed ham, and grated cheese into crust. Beat eggs and milk together and pour into crust. Bake 30 minutes at 375 degrees. Lower heat to 350 degrees and bake for additional 10 minutes.

  1. Excellent recipe. Never had a quiche before. I added more ham (1 cup) and about a quarter cup of red onions, red and green bell peppers as an extra bonus. Easy recipe to experiment with to create new tastes.

  2. I bring a breakfast casserole to work whenever we have a “buffet day.” I tried this one last month. No one wants my old recipe. They demanded this one! Easy and delicious. My husband calls it a “keeper.”

  3. I made this with cubed potatoes, ham, onion and one packaged frozen spinach. Topped everything with shredded gruyère cheese. Everyone loved it. Made it again the next week, but made it in muffin tins. Cooled after they came out of oven, then bagged them in freezer bags. Now I have an on the go breakfast treat!

  4. Simple and easy to prepare. Good recipe for adding favorite cheese, maybe some crumbled bacon, asparagus tips, etc.
