Yield: 4 Parfaits

  • 1 pint strawberries
  • 1 pint blueberries
  • 2 cups vanilla pudding
  • 8 graham crackers or other thin cookie
  • whipped cream
  • sprinkles

Wash the berries, then hull and slice the strawberries into blueberry-sized pieces.

Place a graham cracker in the bottom of each cup (break them to fit as needed), then top with a generous spoonful of pudding.

Add an even layer of strawberries, then blueberries.

Begin again with the graham cracker, ending with the berries.

Refrigerate for several hours or overnight.

Top with whipped cream and sprinkles before serving.
  • What a wonderful dessert to end the festivities of Independence Day! I made instant pudding the day before, and the ingredients and assembly of this dessert were so easy. The graham crackers softened, and the combination of the flavors was delicious. I even made my own whipped cream!
