Molasses-Ginger Cookies
Photo Credit : Heath RobbinsOne of the “logs” you make with this molasses-ginger cookies recipe will produce 24 cookies, so unless you’re baking for your family reunion, you might want to freeze the rest of the dough for future treats.
1 cup sugar, plus extra for garnish
1/4 cup dark molasses
3/4 cup (1-1/2 sticks) unsalted butter, softened
1 large egg
2 cups flour
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/4 teaspoon salt
2 teaspoons baking soda
3 ounces crystallized ginger, cut into small pieces
In a large bowl or the bowl of a standing mixer, combine sugar, molasses, butter, and egg.
In a separate bowl, mix remaining ingredients. Add to the first bowl and mix well.
Form 3 logs, each approximately 8 inches long and 1-1-1/2 inches in diameter.
Wrap in waxed paper or parchment and refrigerate until firm.
Heat oven to 350°.
When dough is firm, remove wrap and cut into 1-inch rounds. Toss each slice in granulated sugar.
Place on a cookie sheet lined with parchment paper.
Bake 8-12 minutes, depending on size of raw dough.
