Hello Yankee readers! My name is Jen and I’ll be bringing you fresh Yankee recipes every couple weeks here on Cooking New England. I’m a Midwestern girl who transplanted to Boston in 2007 with my Hubby and our two fat cats. I work a full time desk job as an engineer and have found a great way to relieve the stress of my 9-5 job by trying new recipes in the kitchen.

For my first post, I decided to choose a festive recipe. Saint Patrick’s Day is coming up in a couple days and I wanted to try my hand at some Irish Soda Bread. Believe it or not, I’ve actually never had Irish Soda Bread before. Now that I’ve made it, I can see why it’s so popular. I wish people made it more frequently than just the weeks leading up to St Patrick’s Day!

The dough for this bread comes together quickly and easily. The carraway seeds provide a subtle herbal sweetness unique to Irish Soda Bread while the golden raisins provide a hint of fruitiness. I highly recommend eating this bread while it’s still warm, fresh from the oven, slathered with butter, and possibly some jam.
