Cranberry Surprise Pie
Credit: Jen PerezCredit: Jen Perez It won’t add any extra stress to your day because it comes together without the use of a mixer in mere minutes. You could even make it today and keep it in the refrigerator until Thanksgiving if you’d like. If you can’t manage to squeeze it into your plans for this holiday, promise me you’ll make room for it on future holiday menus. Hubby and I literally had to hide this pie so that we wouldn’t eat the entire thing in one sitting.

Cranberries, sugar, and sliced almonds go in the bottom of your pie plate.
Credit: Jen PerezCredit: Jen Perez The batter is sweet enough to balance out the tartness of the fresh cranberries. Almond extract provides its unique aroma, and the sliced almonds provide a great little crunch when you bite into them. I served this with freshly whipped cream. When I make whipped cream, I simply mix a tablespoon of vanilla, a tablespoon of sugar, and a pint of heavy cream. The vanilla and sugar sweeten the cream to perfection.

I love what a warm pie does to ice cream. The resulting melty gooeyness is one of my favorite things in the world.

This is a family favorite. Really wonderful flavors and so easy. We serve it warm with vanilla ice cream.
