In this season 5 segment of Weekends with Yankee (episode 505), Amy introduces a cousin of the crisp and crumble family, blueberry buckle. She starts by creaming butter and sugar together until light and fluffy. Then, she alternates combining her wet and dry ingredients into the sugar and butter mixture. Once combined, she adds frozen blueberries, giving the batter a bright blue color. Lastly, she makes a streusel topping to cover the cake by combining sugar, flour, butter and cinnamon. After baking, the cake is tender, moist and chock full of blueberries. The contrasting texture of the crunchy streusel topping knocks it out of the park.
