Nothing beats the taste of home. In this season 5 segment of Weekends with Yankee (episode 503), Amy makes Malfatti, a family recipe. She starts by sautéing onion and spinach, cooking off as much moisture as possible. Then, she adds ricotta cheese and forms a paste to which she adds parmesan cheese, eggs, flour and nutmeg. When the dough is combined, she tucks it in the fridge to cool. Once cooled, Amy forms the dough into small dumplings before boiling them, waiting until they float to the surface. Lastly, Amy places the dumplings in a baking dish, covers them in sauce and cheese, and lets them warm in the oven. Comforting and filling, this Malfatti recipe feels like a warm hug.
