Maine is known for their delicious potato donuts. In this season 5 segment of Weekends with Yankee (episode 502), Amy mimics the signature Maine dessert with her Chocolate Glazed Potato Donut Muffins. She starts by creaming together the butter, sugar, and egg. In a large mixing bowl, she combines flour, cocoa powder, and baking soda. After incorporating a third of the dry mix into the wet, she adds the star of the show, mashed potatoes. After combining all her ingredients, the muffins are ready to bake and glaze. The result is a sweet, moist, chocolatey muffin with the texture of a tasty donut.
