  1. Thank you … I use the boiling water method, but didn’t know about the scoring an X. That will make my weekend tomato session(s) quite a bit easier I bet! Thank you again.

  2. Being from the state that has the best TOMATOES, when they have to be pealed, I do cut an X in the bottom of the tomato. After placing them in hot water for a couple of minutes drop them in ice water an see how easy it is to skin them.

  3. I made the Scalloped Tomatoes casserole for company last week and all the ladies wanted the recipe. It was very good.

  4. 15 seconds in the boiling water is all you need, and doesn’t cook the tomato. And just run under the cold tap instead of bothering with ice water. Simplify!

  5. Using a fully-ripe tomato with skin and stem end intact, run the back of your paring knife firmly over the whole tomato. You will see a thin film of juice gathering under the skin. Then, just slit and remove the skin.

  6. With being from the state with the best tomatoes, New Jersey, I do my tomatoes with the hot water dip but only 20 to 30 seconds. Then I just run them under cold water to stop the heat from cooking the tomato. No cut in them on the bottom so that the water gets under the skin. This takes away flavor. Just drop them whole into the pot of boiling water. No 2 to 3 minutes either. You’ll have a pot of sauce by the time your done. This method works on any variety of tomato also.
