Seafood Casserole

Ideal company fare for the busy cook — it takes minutes to assemble and cooks in half an hour. Any left over can be frozen and reheated with good results.

Yield: Serves 8.


  • 1 cup crackers, crushed
  • 1 cup canned, frozen, or fresh crab meat
  • 1 pound fresh or frozen shrimp, uncooked
  • 1-1/2 pounds haddock, uncooked
  • 1/2 pound scallops, uncooked
  • Salt and pepper to taste
  • 1 can mushroom soup
  • 1/2 cup milk
  • 1/4 cup sherry
  • Butter


Mix 1/2 cup crushed crackers with all other ingredients except butter. Season to taste and put into a buttered 3-quart baking dish. Sprinkle remaining crackers on top and dot well with butter. Bake 30 minutes at 350 degrees F.
