Marvelous just as it is, but could also be made with a half cup of strawberries added to the rhubarb.
Yield: Serves 4.
- 2 cups cut up tender rhubarb
- 1 cup sugar
- 3 cups fresh bread cubes, without crusts
- 1/2 cup butter, melted
Mix rhubarb and sugar in one bowl, bread cubes and melted butter in another bowl. In a baking dish, arrange a layer of rhubarb mixture, then a layer of bread cubes, and repeat. Bake at 350 degrees F for 40 to 45 minutes. Serve warm, topped with whipped cream or ice cream.
