Romaine Salad with Garlic Dressing

These familiar ingredients are Jacques’ easy take on a classic Caesar salad.

Yield: about 10 servings


  • 2 heads romaine lettuce, cut into 2-inch pieces, washed, and dried
  • 2 tablespoons Dijon-style mustard
  • 2 cloves garlic, finely chopped
  • 2 tablespoons red wine vinegar
  • Kosher or sea salt and freshly ground black pepper, to taste
  • 2/3 cup extra-virgin olive oil


Divide lettuce between two large salad bowls. In a small bowl, mix the remaining ingredients. At serving time, divide the dressing between the salad bowls, and toss to combine with the greens.
