Rice Salad

Quick and easy. Good for barbecues and picnics.


  • 1 10oz. (pouch) frozen peas w/butter
  • 1 10oz. (pouch) rice w/mushrooms
  • (with carrots)
  • 1c. Julienne ham ( I use imported
  • Danish ham and have them shred it)
  • 2c. lettuce chopped
  • 1 sm. Cucumber chopped ( slice thin)
  • 2 hard cooked eggs sliced
  • 1sm. Onion chopped
  • tomato wedges (plum)


Boil pouches according to directions. Now comes the fun. In a large clear bowl empty the rice pack in bowl spread even. Next lay on the ham,than peas, lettuce, onion, And cucumber and than pour over the white wine vinegar. TOP WITH EGGS AND TOMATOES
