  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla
  • 2 cups finely grated carrots
  • 1 8-ounce can undrained crushed pineapple

Preheat oven to 350 degrees.

To make the cake: Mix the first four ingredients. Set aside. In another bowl, mix the oil and sugar. Add the eggs one at a time; mix well. Stir in the vanilla.

Add the dry ingredients to the egg mixture and combine until incorporated. Pour into a cake pan and bake 35 minutes, or until done.

  • 1/2 cup butter
  • 2 cups confectioners sugar
  • 1 teaspoon vanilla

I have been looking for this recipe forever in Yankee Magazine. I made it for my stepfather and he says it is his best EVER. I am making it again tomorrow June 18, 2005, for his Father’s Day surprise. It is AWESOME.
