Pecan Squares

Crust:

Ingredients

  • 8 tablespoons unsalted butter, room temperature, cut into 8 pieces
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour

Instructions

Preheat oven to 375 degrees. To prepare the crust, cream butter and brown sugar together. Add flour and combine thoroughly. Spread mixture into the bottom of a 9-inch-square baking pan. Bake 20 minutes.

Filling:

Ingredients

  • 1 cup pecans
  • 2 eggs
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1/2 cup coconut
  • 1/8 teaspoon salt

Instructions

To prepare the filling, place pecans in a food processor and process with short pulses until finely chopped, then set aside. Process eggs, sugar, and vanilla extract until evenly combined. Add coconut, flour, salt, and pecans. Process with 2 to 3 short pulses until just combined. Spread over the baked crust and return to the oven 20 minutes. Cool 10 to 15 minutes, then cut into small squares.
