Pasta Fagioli

This is one of my favorite soups. It is tasty, quick, and cheap. A slice or two of home baked bread and a crisp salad are perfect companions.

Ingredients

  • 1 pound Mini Penne*
  • 2 cans, 15 ounces each, tomato sauce (Contadina please)**
  • 1 can chicken broth
  • 2 cans cannellini beans
  • 1 ounce extra virgin olive oil
  • 2 cloves garlic, crushed and minced
  • 1/8 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper, freshly ground
  • Parmesan cheese
