Greek Spinach Melt

Yield: 10-12 servings

Ingredients

  • 1 cup crumbled feta cheese
  • 2 packages frozen chopped spinach, thawed, drained and squeezed dry
  • 1/2 onion, chopped fine
  • 1 clove garlic (use 2 pieces chopped fine)
  • 4 Roma tomatoes
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 loaf French bread

Instructions

Mix all ingredients (excluding bread). Spoon generous portion on slice of bread and toast on broil until browned and hot.
