Gingersnap Baked Beans

Yield: 6-8 servings

Ingredients

  • 3/4 cup crushed gingersnaps
  • 2 tablespoons onion, chopped
  • 1/4 cup brown sugar or syrup
  • 4-5 strips bacon, fried crisp and crumbled
  • 2 11-ounce cans pork and beans
  • 1/4 cup catsup

Instructions

Mix all ingredients. Put in a 1-1/2 quart greased casserole. Bake at 375 degrees for 30 minutes.

    Used a tomato-based spicy barbecue sauce in place of catsup and packaged bacon bits. Made these twice and everyone just loved them.
