  • Ounces) pinto beans, rinsed and drained
  • 1 cup reduced-fat ricotta cheese
  • 1 small green bell pepper, chopped (1/2 cup)
  • 1 teaspoon ground cumin
  • 6 flour tortillas, (8 inches in diameter)
  • 1/4 cup shredded Cheddar cheese (1 ounce)
  • 1/4 cup shredded Monterey Jack cheese (1 ounce)
