Pumpkin Streusel Bars

A flurry of pumpkin desserts crop up each holiday season, each trying to muscle out the mighty pumpkin pie for top billing at the Thanksgiving dessert table. While we wouldn’t try to dethrone a classic, we think these pumpkin streusel bars are a terrific variation on the pumpkin treat theme.

A sweet graham-cracker cookie crust is topped with creamy pumpkin filling, then a layer of oat-y crumb topping flavored with cinnamon and pecan. Topped with fresh whipped cream or a scoop of vanilla ice cream, these pumpkin streusel bars are a tasty new way to get your pumpkin fix.
