This is good served with grilled chicken or fish fillets
1 1/2 cups grated zucchini
2 carrots, coarsley grated
2 eggs, beaten
1/4 tbsp milk
2 tsp flour
1/4 cup grated parmesan cheese
3/4 tsp seasoned pepper
3/4 tsp garlic salt
Place zucchini and carrots on paper towels; let drain for 5 minutes. In large bowl, combine eggs, milk, flour, cheese, pepper and garlic salt. Stir in zucchini and carrots. In lightly greased non stick skilllet, spoon the batter one tablespoon at a time. Cook 1 minute on each side or til golden brown. Serve warm.
