1 chicken breast – skinned & cut into bite-sized p 2 Tbsps roasted cashews 3 Tbsps yogurt 1 heaped tsp curry powder 1 Tbsp oil 1 chopped onion 1 clove garlic – chopped Freshly ground pepper 1/2 lemon 2 slices fresh ginger 1/2 tsp dried chillies or to taste 2 Tbsps chopped green onions
Marinate the chicken pieces in the yoghurt and curry powder (overnight if you wish). Heat the oil in a frypan and lay in the chicken pieces. When the outsides are well coloured stir in the onion, garlic, pepper, lemon juice, ginger and chillies, turn up the heat and cook for 5-10 minutes. Add the cashew nuts and chopped green onions, stir and cook for 5 minutes over medium heat. Serve.
