1-1/2 cups (3 sticks) margarine
1 cup honey
4 eggs
1 tablespoon vanilla extract
1 teaspoon salt
5 cups old-fashioned oatmeal
2 cups whole-wheat flour
1 tablespoon baking powder
1 cup coconut
1 cup chocolate chips
1 cup cashew halves
1 cup raisins
1 cup peanuts
1 cup sunflower seeds
1 cup walnut halves
Cream the margarine, honey, eggs, and vanilla; set aside. Mix the salt, oatmeal, flour, and baking powder in a large bowl; then combine with margarine mixture. Fold in coconut, chocolate chips, cashews, raisins, peanuts, sunflower seeds, and walnuts. Using round ice cream scoop, mound onto a lightly greased cookie sheet and bake at 325 degrees F for 20 minutes. Cookies will not flatten — they will stay mounded!
