This dip is really a delightful garlicky hummus. Augmented with other goodies — tomatoes, cucumbers, and lettuce, for instance — it also makes an excellent sandwich filling.
8 ounces tofu
3 tablespoons lemon or lime juice (usually 1 large lemon or lime)
1 clove garlic, sliced
4 tablespoons tahini (sesame flaste)
1/2 teaspoon salt
Pepper to taste
Chopped Italian parsley, for garnish
Chopped onion, for garnish
Place first 6 ingredients in a blender or food processor and blend until smooth. To serve, place in a shallow bowl and sprinkle with chopped parsley and onion. Offer wedges of pita to scoop it up.
