Sweet Potato Orange Pudding

Serve this dish for Sweet Potato Orange Pudding with ham.


Serves 6


1-1/2 cups grated raw sweet potatoes
3/4 cup orange juice
1 teaspoon grated orange rind
1/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon cloves
1/2 cup melted butter


Mix the ingredients well and pour into a greased casserole. Cover the dish with aluminum foil during the first 35 minutes of baking time in a 350 degree F oven. Then turn the oven down to 325 degrees F and remove the foil. Bake for 30 minutes longer. When the pudding is done, a knife inserted in the center will come out clean. Children love this pudding topped with marshmallows. (Arrange a layer of them on the casserole for the second part of the baking.)
