Bright green spinach and red onion rings create an attractive vegetable side dish for roast chicken or pork.
2 tablespoons soy sauce
2 tablespoons rice vinegar
1/2 teaspoon sugar
1/2 teaspoon sesame seed oil (dark)
3 tablespoons vegetable oil
2 medium-size red onions, sliced and separated into rings
1-1/2 pounds spinach, rinsed, stemmed, and torn into small pieces
1. In a small bowl, combine the soy sauce, vinegar, sugar, and sesame seed oil. Whisk to blend and set aside.
2. Heat the vegetable oil in a wok or large skillet. Add the onion rings and stir over high heat for 30 seconds. Add the spinach and continue stirring over high heat for 30 seconds more. Pour on the soy sauce mixture and reduce the heat. Stir continuously until the liquid is evaporated and the onions are crisp-tender. Serve immediately.
