Cake like this comes along once in a long, long while. Served hot topped with slowly melting shredded cheese, this will bring everyone running.
1/4 cup shortening
1/2 cup sugar
1 egg
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup milk
1/2 teaspoon vanilla
2 cups hulled and sliced fresh strawberries, or two 10-ounce packages frozen, thawed and drained
Preheat oven to 375°F.
Cream shortening and sugar until light and fluffy. Beat in egg. Sift dry ingredients together and add alternately with combined milk and vanilla to creamed mixture. Grease a 9 by 9-inch baking pan, and pour batter into it. Spread berries over batter
1/4 cup softened shortening
1/2 cup light brown sugar
1/3 cup flour
1/2 teaspoon cardamon
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon mace
1/4 teaspoon nutmeg
Combine topping ingredients and blend with fork until consistency is even. Spread over berries and cake and pat down gently. Bake 40 to 45 minutes, until cake tests done. Serve hot topped with shredded cheese or whipped cream.
