12 large shrimp
6 tablespoons paprika
2 tablespoons black pepper
2 tablespoons salt
1 tablespoon chile powder
2 teaspoons brown sugar
pinch cayenne pepper
1 tablespoon olive oil
Green Apple Chipotle Chili Pepper Salsa (below)
Garnish: apple slices, fresh cilantro sprigs
Peel shrimp, leaving tails on; devein if desired. Set aside. Combine paprika and next five ingredients. Lightly sprinkle mixture over shrimp. Store leftover spice mixture in an airtight container for future use.
Saute shrimp 1 minute on each side in hot olive oil in a large skillet. Serve 3 shrimp with 1/4 cup Green Apple Chipotle Chili Pepper Salsa. Garnish, if desired.
1/2 cup diced Granny Smith apple
1/4 cup diced red onion
1/4 cup diced red bell pepper
2 tablespoons chopped fresh cilantro
2 tablespoons apple juice
2 tablespoons red wine vinegar
pinch chipotle chili pepper chili powder
Combine all ingredients. Cover and chill 1 hour. Yield: 1 cup
