Shredded Yams
A favorite specialty of
New Perry Hotel, Perry Georgia
2 pounds raw sweet potatoes *
1 Tablespoon table salt
1 gallon water
1 cup granulated sugar
1/2 cup white Karo Syrup
1/2 cup water
1/2 cup butter
1 cup pineapple juice
Preheat Oven to 350 Degrees F. Peel and shred yams. Add with salt to 1
gallon water. Wash and drain yams and then put them into baking dish or
shallow pan. In a small saucepan, mix sugar, Karo, water. Cook until it
thickens somewhat and a simple syrup forms. Add butter. Pour pineapple
juice over yams and add the simple syrup. Place in oven and bake until
yams are transparent, about 45 minutes. Serve hot. ENJOY! Serves 8.
*Nita’s Note: A yam in Central Georgia is a red or pink fleshed sweet
potato — not yellow fleshed. If you have to use the latter, you will need
to increase and adjust the amount of sugar used.
