Moist, tender pork chops in a sweet, bright-red sauce full of onion bits. Original, flavorful, and satisfying. Special enough for company. –Seaward Inn, Rockport, Massachusetts
1/3 cup brown sugar
3/4 teaspoon salt (or to taste)
1/8 teaspoon pepper
1-1/2 tablespoons lemon juice
1/3 cup chili sauce
1/3 cup water
1 medium onion, chopped fine
6 pork chops, about 1 inch thick
Seasoned flour (about 1/3 cup, mixed with salt and pepper to taste)
1/2 cup evaporated milk
Seasoned bread crumbs (about 1 cup)
Combine first 7 ingredients and pour into baking dish. Trim excess fat from pork chops and dip in seasoned flour, then in evaporated milk. Dip one side of chops in seasoned bread crumbs and arrange in baking dish, crumb side up. Cover tightly and bake in preheated oven at 350 degrees for 1-1/2 hours or until tender. Remove cover the last 20 or 30 minutes so that crumbs will brown. Check from time to time to see if more liquid is needed and add tomato juice if so. Serve with lemon-buttered broccoli and mashed potatoes.
