Scented Geranium Jelly
Original recipe was found in a Storey Publications “Growing and Using Scented Geraniums” booklet. Is easy and delicious!
Yield
About 8 1/2 pint jars
Ingredients
1 quart apple juice or cider
2 cups scented geranium leaves (rose are best)
5 cups sugar
1 package pectin
Instructions
Simmer leaves in apple juice 10 minutes. remove leaves and discard. Add pectin. Bring liquid to a boil that cannot be stirred down. Add sugar stirring constantly. Boil hard 1 minute. Skim, pour liquid into hot sterilized 1/2 pint jars, process 10 minutes in a boiling water bath.




I made this jelly on August 24, 2016 . I followed the recipe exactly. I used leaves from my Rose Scented Geranium plant. This jelly is delicious with a soft rose flavor. It gelled really well. I will make more of this jelly. It’s that good. Because of this recipe, I will now bring my rose geranium plants inside over the winter so I’ll be able to pick the leaves for more of this jelly. I’m giving a jar of to my closest friends for Christmas. What a great gift this will be. Thank you for sharing your recipe.
