Nectarine & Tomato Salad with Feta & Pistachios

Ingredients
½ pounds grape tomatoes, halved
3 ripe nectarines, cut into 1-inch chunks
3 ounces feta, crumbled
1 small red onion, diced
¹⁄3 cup firmly packed basil leaves, roughly chopped
¼ cup chopped parsley leaves
½ cup shelled, salted pistachios, roughly chopped
4 tablespoons good balsamic vinegar
4 tablespoons olive oil
Instructions
In a large bowl, toss the tomatoes with the nectarines, feta, onion, basil, and parsley. Just before serving, toss the pistachios over the salad, then drizzle with the vinegar and oil. Serve at room temperature.




It’s an unusual combination of ingredients. Made it last night & it’s delicious!!
Looks more like peaches than nectarines in the picture.

I made this salad for dinner tonight and this is a keeper recipe. It is quick to make and it will be fun to share this salad with family and friends in the future.
Interesting combination of flavors and textures. We loved it! I did cut the oil and vinegar amounts in half and used white balsamic vinegar and a touch of ground pepper.
This came out Amazing! I had no pistachio so subed in walnuts and only use 1 tablespoon of oil and 1 tablespoon of balsamic. Flavor was perfect
