Festive and fun to make without hours stirring and measuring. Kids love to get their hands on this edible project.
1 cup maple syrup
1/3 cup light corn syrup
1/2 cup heavy cream
4 tablespoons unsalted butter
8 cups popped popcorn
1-1/2 cups chopped dried cranberries
1-1/2 cups chopped dark chocolate
In a medium saucepan over medium high heat, combine maple syrup, corn syrup, and cream. Bring to a boil over medium-high heat and cook, swirling without actually stirring, until a candy thermometer reaches 260 degrees F (firm ball stage). Remove from heat and stir in butter. Keep warm until ready to use.
Spray a light coating of non-stick cooking spray on a large bowl. Add popcorn, cranberries, and chocolate. Stir well. Drizzle half of the caramel over the top and stir well. Drizzle remaining caramel and shape popcorn into balls, by gently, yet firmly, pressing. Transfer balls to a parchment-lined baking sheet and cool to harden.
