This cake is excellent with coffee, a nice treat for Sunday morning breakfast.
1/3 cup butter
1 cup brown sugar, firmly packed
2 eggs, unbeaten
1-1/2 teaspoons vanilla
1/3 cup milk
1/3 cup sweetened shredded coconut
1-1/2 cups sifted all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
Mix together the butter, sugar, eggs, vanilla, and coconut until well blended. Sift together flour, baking powder, and salt, add this to the first mixture alternately with the milk, and beat until smooth. Pour into a greased 8-inch square pan.
1/2 cup all-purpose flour
1/2 cup brown sugar
1/4 cup hard butter
1/2 cup pecan nuts
1/3 cup sweetened shredded coconut
Mix topping ingredients all together and spread over the batter. Bake at 375 degrees F for 30 minutes.
