Wrapping ears of corn in aluminum foil and baking them in the oven gives them a special flavor that nearly duplicates that of corn cooked over an open fire. But this method is neater and easier than grilling outdoors.
6 tablespoons butter, softened
1 teaspoon curry powder
4 ears corn, husks and silk removed
Salt and freshly ground black pepper
1. Preheat the oven to 400°. Blend the butter and curry powder together. Spread over the kernels of corn, then sprinkle each ear with salt and pepper.
2. Wrap each ear in aluminum foil and twist the ends to close tightly. Place directly on the oven rack and roast for 25 to 35 minutes. Serve immediately.
