Delicious with sautéed mushrooms.
2 pounds cubed venison
1 cup flour
1 teaspoon onion salt
1/2 teaspoon black pepper
1 teaspoon sweet basil
1/2 teaspoon poultry seasoning
Roll the pieces of venison in the seasoned flour obtained by mixing the other ingredients together. Heat iron skillet to hot, and add 1/2 cup bacon fat. Place cubed meat in the skillet and sear well all over. Add 2 cups water and cover the skillet. Finish by baking in a 375 degrees F oven for 50 minutes. The liquid will make a medium thick gravy.
