12 to 15 new carrots
1/2 teaspoon sugar
1/2 teaspoon salt
1 tablespoon fresh parsley, chopped
2 tablespoons butter
1/2 cup light cream (optional)
Scrub the carrots, slice into matchsticks, and combine in a saucepan with the rest of the ingredients except for the cream. Saute for about 5 minutes or just until tender. Add cream, if desired, and just barely heat.
