These cookies make a great after-school snack or lunch-box treat.
1/2 cup (1 stick) unsalted butter, softened
2/3 cup packed light-brown sugar
1/2 cup molasses
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon ground cardamom
Cream the butter, brown sugar, and molasses. Beat inthe egg and vanilla. Sift remaining ingrediients and stir them into the creamed mixture. Cover and refrigerate the dough for at least 1 hour. Preheat oven to 350 degrees F. Roll the dough into 1-1/2-inch balls and place them onto greased baking sheets, leaving some room between them. Bake for 16 to 18 minutes. Cool briefly on the sheets, then transfer cookies to a rack to cool.
