1 pound cooked meat (ground beef, shredded pork, chopped/shredded chicken)
1 package taco seasoning
1 can beans (drained) or refried beans
1 can RoTel tomatoes or 1 1/2 cups salsa
2 cups crushed tortilla chips or 8 corn tortillas (cut into small pieces) –
perfect for the bottom of the bag or stale tortillas
3 cups shredded cheese or choice – the cheese wasn’t that noticeable, so
less probably would have been fine.
Preheat oven to 350 degrees. Grease casserole dish or other baking dish
with tall sides. Layer in this order
Layer 1: 1 meat mixed with 1/2 package of taco seasoning.
Layer 2: 1/2 crushed tortilla chips/tortillas
Layer 3: remaining meat, remaining taco seasoning and beans mixed together
well
Layer 4: 1/2 cheese
Layer 5: RoTel or salsa
Layer 6: remaining shredded cheese
Layer 7: remaining crushed tortilla chips or tortillas
Bake until heated through and cheese is bubbly. Serve with sour cream,
additional salsa and fruit.
