This one came from my cousin on Oahu. I’ve adjusted it a little through the years.
1 C peach or apricot preserves
1 small can crushed pineapple w/juice
1/2 C catsup
1/2 C water
2 Tbsp. brown sugar
1 Tbsp. vinegar
1 tsp. soy sauce
salt and pepper
8 pieces of chicken, your choice, skinned
corn starch
Dip chicken pieces in corn starch, and brown on both sides in a little vegetable oil.
Combine all other ingredients in a small pan and bring to simmer.
Arrange chicken in baking dish in one layer, and pour sauce over to cover. Cover with foil, and bake for 1 hour in 350 degree oven.
Serve with plain rice or fried rice, and a vegetable.
