This recipe for ham steak illustrates the way a good sauce can turn an ordinary dish into something uncommonly good.
1 ham steak, 1-1/2 inches thick
1 teaspoon dry mustard
1/4 cup apple jelly
3/4 cup apple cider
1 tablespoon cornstarch
2 tablespoons cold water
1/4 teaspoon grated lemon rind
1 cup seedless green grapes, halved
Rub the ham steak on both sides with mustard and place in a shallow baking dish. Bake 30 minutes in a 350 degree oven.
Heat the jelly and cider together and pour over the steak. Bake an additional 30 minutes, basting frequently.
Remove the ham to a warm platter. Mix the cornstarch with the water. Stir in the liquids from the baking dish and heat to boiling, stirring all the while. Simmer one minute. Add the lemon rind and grapes and reheat. Serve over the ham.
