This ham loaf is a pleasant change from the usual meat loaf. If desired, add a little minced onion before baking. The sauce makes a large amount, and the remainder can be stored in the refrigerator and used as needed.
1 pound ground ham
1/2 pound ground pork
1 egg, beaten
1 cup milk
1 cup lightly salted cracker crumbs
1 small green pepper; chopped
1/4 cup maple syrup
1 tablespoon dry mustard
Mustard Sauce (recipe follows)
Mix first 6 ingredients together, reserving a few pieces of green pepper, and place in a greased loaf pan. Top with the green pepper pieces and bake at 350 degrees F for 1 hour, 10 minutes. During the last 20 minutes, baste with the maple syrup mixed with the dry mustard. Serve with Mustard Sauce.
1-1/2 cups Dijon mustard
4 teaspoons dry mustard
3/4 cup sugar
1/2 cup white vinegar
1-1/3 cups oil
1 cup chopped fresh dill
Salt to taste
Blend mustards and sugar. Add vinegar, then gradually whisk in oil. Add dill and salt. This thickens as the oil is added and sauce is allowed to stand. Refrigerate. Makes about 3 cups.
