The most convenient way to grill beets is in a grilling basket. However, if you don’t have one, they may also be placed directly on the grill as you would potatoes.
12 medium beets, unpeeled
4 tablespoons butter
2 tablespoons honey
1 tablespoon finely chopped fresh ginger
1 tablespoon soy sauce
1. Boil, steam, or microwave the beets until partially tender. Transfer them to a colander set under cold running water. When cool enough to handle, peel the beets, but leave them whole.
2. In a saucepan, combine the butter, honey, ginger, and soy sauce and heat until the butter and honey are melted. Brush the ginger mixture over the beets and place them in a grilling basket or set them directly on a hot grill. Basting frequently, cook the beets for 8 to 10 minutes or until tender. Transfer them to a serving dish and pour on any flavored butter that remains in the saucepan.
