The strawberries stand up fresh and tall, and take on an enticing gleam from the sauce. Other fresh berries make excellent substitutes.
1 baked pie shell (plain pastry)
1 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
3/4 cup water
1 teaspoon lemon juice
3 cups strawberries
1 cup cream for whipping
Combine sugar, cornstarch, salt, water, and lemon juice in saucepan. Cook, stirring, over low heat until mixture thickens. Simmer in double boiler 20 minutes. Cool.
Place fruit, part of it sliced, in baked shell. Place whole berries on top. Pour cornstarch mixture over it. Chill. At serving time, whip cream and pile on top of pie.
