Dark and spicy, with a reputation as the very best ever.
1/2 cup shortening or butter
1/2 cup sugar
1 egg, beaten
1 cup molasses
2-1/2 cups flour
1-1/2 teaspoons baking soda
1/2 teaspoon ginger (more if desired)
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 cup hot water (or a little less)
Cream shortening or butter and sugar until light and fluffy. Add beaten egg and molasses, and mix well. Sift together dry ingredients and add, mixing well. Add hot water and beat until smooth. Bake in a greased 9-inch square shallow pan for 35-40 minutes at 350 degrees F, or until a toothpick inserted into the center comes out clean (the edges will be quite crisp). Serve with whipped cream.
