Garden Patch Potato Salad

I found this recipe many years ago in a magazine. My friend’s mom who hates potato salad ate some and liked it.

Yield

8 servings

Ingredients

5 potatoes
1 cup zucchini, sliced
1 cup cooked chopped carrots
1 cup cook cut green beans
1 cup cooked green peas
1/4 cup chopped onion
2 tablespoons chopped chives
1-1/2 teaspoon salt
1/8 teaspoon pepper
3/4 cups mayonnaise

Instructions

Cook, peel and slice potatoes. Combine zucchini, carrots, beans, peas, onions, chives and seasonings. Add mayonnaise. Chill.
You can add more mayonnaise if needed before serving.
