Traditionally part of a country-style breakfast, these fried apples are also good served with roast pork or turkey.
6 firm apples (Granny Smith)
3 tablespoons bacon fat
1/3 cup sugar
Peel and quarter apples. Remove core and cut each piece into two or three slices. In a large skillet, heat the bacon fat and add apple slices, tossing to coat. Cover and reduce heat. Cook until apples begin to give off juice. Remove cover and sprinkle with sugar. Increase heat and cook, stirring continuously, until apples are quite brown.
