1 pound dried lima beans
butter
lemon juice
salt and pepper
chopped chives or parsley
Soak lima beans overnight. Boil them in fresh water until soft, but do not allow the beans to burst. Pour off the water, and mix the beans with a good-sized lump of butter, some lemon juice, salt and pepper, and cream. Serve garnished with chopped herbs. Lentils and other dried beans may be prepared in the same way.
